- 1 cup of raw honey

- A glass jar with a lid that fits snugly

Instructions:

  1. Peel the garlic cloves and smash with the back of a spoon or knife to help with the fermentation process.

2. Place the garlic cloves in an air tight jar and pour honey over.

3. Seal the jar with a lid and set aside in a dark place at room temperature.

4. In the first couple of weeks (especially during week 1) you will need to "burp" the jar daily by removing the lid for a few seconds and closing it back up again. It is also a good idea to flip the jar over for a few seconds to cover all the garlic with honey. Then return back to your cabinet or pantry.

5. It is okay that the honey floats to the top but it is important to keep the honey submerged in honey. That's why flipping the cup is important.

6. You will begin to see bubbles that means it's working.

7. After 2-3 weeks of burping the fermentation process slows down because it is almost fully ready and daily burping won't be as necessary.

8. The garlic can darken slightly and the honey will begin looking runnier. After 4 weeks your garlic honey should be fully fermented, however I recommend leaving it for another 1-2 weeks for even better results.

The shelf life is one year but can go on much longer if stored properly.

*Some people like to leave the lid on loose to prevent the need of having to burp so often. I still recommend closing it completely. It doesn't have to be put on too tight but its best to not introduce too much air into your mixture.

*Depending on the size of your jar you can use less or more of the ingredients, however it is best to stick to a 1:1 ratio.

How to Use

Food: Eventually once the garlic has infused with the honey it becomes more delicious than in it's raw form and easier to eat. There are many ways you can consume this mixture.

Such as:

  • a glaze over roasted pumpkin as one example
  • drizzled over a toast with cheese.
  • as a salad dressing by adding some olive oil and balsamic.

Medicine: Take a spoonful of honey at the first sign of an itchy throat or illness coming on. You can also take a whole garlic clove and eat it. I do this often with a raw garlic clove at the first sign of illness, but with this mixture it is even more beneficial and much more tasty.
