Natural Strawberry Frosted Cupcakes Recipe

Today I am sharing with you a delicious cupcake recipe. We start with chocolate cupcakes you can use your favorite chocolate cupcake recipe or use the one I use below. We frost these with homemade strawberry frosting that is not only delicious but it is very natural and pretty. We do not use any food coloring, the pink color comes from the strawberries! No Red 40 around here!

I use this recipe to make the chocolate cupcakes.

Here is the simple strawberry frosting recipe.

Frosting Ingredients:

5 Strawberries
1 cup butter softened
3 1/2 cups powdered sugar
1 tsp vanilla extract

Puree strawberries by mashing and cooking on low heat stirring with wooden spatula until bubbling. Let simmer for a couple minutes on low. Turn off and let cool.
Mix all ingredients in mixer or blender. I suggest starting off with only some of the strawberry puree and add more depending on how thick or light you want your buttercream.
