This recipe was derived from our family favorite thumbing cookies recipe. We wanted to twist it up for Valentine's Day and make them heart shaped. We came across Linzer Cookies and came up with this recipe below.

What are Linzer Cookies? I wondered the same. I've always called them jam cookies. Well the origin of these cookies is from Austria in a region called Linz, which gives them their name, Linzer Cookies.

They are sandwiched cookies filled with fruit preserves and have a circle cut out on the top layer to expose the preserves. They are topped with powdered sugar.

We decided to cut them out into heart shaped with a smaller heart shape on the top layer. We used regular store bough strawberry jam, but occasionally make our own jam. You can find our strawberry jam recipe here!

  1. Preheat oven to 325 F. Beat butter and sugar together until light and fluffy. Add egg yolk, vanilla extract, flour, and salt. Mix. Knead dough with hands a few times to stick everything together.
  2. Divide dough In half, flatten, cover each half with plastic wrap, and refrigerate for 15 minutes or until more solid.
  3. Remove one disc of dough and lay over floured surface. Roll out till 1/8 inch thick and cut out about 2 inch heart shapes. Re-roll and flatten out, until you've cut out all the dough. On half the cookies cut out a smaller heart shaped window using a small heart stencil. With a spatula carefully transfer cookies to lined baking sheet. Bake for 10-12 minutes until lightly browned edges. Repeat with other half of the dough. Cool completely on a wire rack.
  4. Spread jam on flat cookies and top with the heart shaped window cookie. Dust with sifted powdered sugar.
